I've had a really rough few weeks; car repair, broken bike, and macbook death. Needless to say, all the pictures of things I took and intended on posting are possibly gone forever.
Matt and I went to Ireland in April, I'll try to post some pictures once I get this computer issue worked out.
I've decided I don't take enough time to do the things I enjoy. To resolve this, I am going to start setting aside at least one day a week to bake, sew, and do random artsy things....or nothing if I so choose. This city steals all my time between work, traffic, and trying to get general errands done.
With that said, I bought a new vegan cookie book about a week ago and think I'm going to try to make everything in it.
Here is the first project:

Chewy Caramel Pecan Cookies
I followed the recipe, but swapped the pecans for walnuts since that is what we had in the cupboard.
I usually tweek the recipe a little depending on what ingredients I have on hand, but tend to try to stick to the original for the first couple of tries until I get the process down, then I feel more confident to try to change things around. The next time I make these, I may try to do the caramel pecan part mixed with brownies or chocolate cookies.
These cookies seemed to go over well and only lasted about 2 days.
